Post Mission 1 Dinner

As thanks for failing at the first Mission, the Mole has set up a nice 5-star dinner for all of the players for making his/her job easier. On tonight's menu we have:
Appetizers
1. Escargots Bourguignon
snails in garlic parsley butter
2. Crevettes Sauce Boursin
shrimp sautéed with sun-dried tomatoes, corn and leeks in a garlic, herb cream sauce
3. Crêpe au Fromage de Brie
brie cheese crepe topped with bechamel sauce and gratineed with swiss cheese
4. Bruschetta de Flageolets
grilled french bread with mashed flageolet beans, tomatoes, thyme, garlic and balsamic vinegar
Entree
1. Poulet aux Champignon et Sauce Marsala
free-range chicken breast tenderloin sautéed with garlic, shallots, nutsake mushrooms, and marsala wine reduction
2. Bar au Beurre Blanc et Crabe
seared seabass with crabmeat in a sherry butter sauce
3. Magret de Canard Sauce Figues
roasted duck breast with a black mission fig, red port demi-glace
4. Ris de Veau à la Reine
sweetbreads sautéed with mushrooms, garlic and ham in a maderia sauce, garnished with puff pastry
5. Filet de Boeuf au Poivre
grilled filet mignon in a rich black peppercorn red brandy cream sauce
6. Moules Marinières ou à la Crème avec Pommes Frites
mussels steamed, with or without cream, in garlic wine sauce and served with pommes frites
7. Filet de Porc Sauce Poireaux aux Pommes et Choux de Bruxelles
pork tenderloin with an leek and apple cider brandy sauce served with caramelized brussel sprouts
Dessert
1. Marquis au Chocolat
a slice of chocolate decadence served over coffee sauce and garnished with caramel and almonds
2. Creme Brulee
creamy baked custard caramelized with sugar
3. Tarte Tartin
caramelized apple tart served warm over vanilla sauce
4. Mousse au Chocolat
fluffy rich chocolate mousse garnished with whipped cream
